Women’s Ministry
Meetings are a mix of Women’s Bible studies, prayer, and activity planning for local mission projects while strengthening our relationships with each other, and growing closer to our Lord Jesus Christ. Blueberry Lemon Scones
Bake 400 degrees
1/3 cup sugar, zest of 1 lemon. Work zest into sugar.
Add to above: 2 cups flour, ½ tsp salt, 2 tsp baking powder – whisk together
Add ½ cup cold butter- cut into small pieces and work butter into dry ingredients leaving different sizes of butter.
Add 1 cups fresh blueberries, mix and then add ¾ cup heavy cream and 1 egg. Beat together.
Pour over dry mixture. Use spatula to fold liquid into dry mixture being careful not to break blueberries.
Using floured board, put mixture on board and shape into round. Cut into wedges.
Brush scones with heavy cream.
Bake 20-25 minutes.
May sprinkle sugar lightly on scones while warm.
Cranberry Orange Scones
Bake 400 degrees for 20 – 25 minutes
Mix 4 cups flour, ¼ cup sugar, 2 tbsp baking powder, 2 tsp salt and zest of 1 orange.
Cut ¾ pound of cold butter into above mixture. Work with fingers making small to larger sizes of butter.
Add 1 cup dried cranberries to above mixture.
Lightly beat 2 eggs and 1 cup heavy cream and add to above mixture.
Work all ingredients using extra flour to be able to pat dough into 2 separate circles.
Cut circles into 8 triangles in each circle.
Wrap circles with wax paper.
Place in freezer for 30 minutes before baking.
Place wedges on cookie sheet lined with parchment paper.
Brush scones with heavy cream and bake 20-25 minutes.
May sprinkle scones with sugar while warm.
